Apple and Fig Gammon

SPAR Tender & Tasty Gammon (Uncooked Boneless)
1 Freshline Onion, quartered
1 litre of SPAR Apple Juice
1 star anise
3 cloves
1 stick of cinnamon
1 bay leaf

½ cup (125ml) Appletizer
1 cup of SPAR Fig Jam
½ punnet (500g) Freshline Red Grapes
2 Tbsp (15ml) brandy (optional)
Juice of 1 lemon

2 x 600g packets of Freshline Seasonal Roast Vegetables
2 Tbsp (15ml) SPAR Olive oil
15g sage
To serve – fresh figs (optional)

Place the gammon in a large pot with the onion, apple juice and spices. Top up with water until submerged and bring to the boil. Reduce the heat to a simmer and cook according to the packaging’s instructions.

In the meantime, put all the glaze ingredients into a saucepan and bringto the boil. Reduce until sticky. Season the vegetables and toss with olive oil and sage and roast 35 – 40
minutes. Remove the gammon from the liquid and place on a baking tray.

Cut off the string and peel off the top layer of skin. Score the fat with a sharp knife and brush half the glaze over. Roast at 200 ºC for 20 minutes, basting frequently with the rest of the glaze. Add the figs, if using, in the last 5 minutes of cooking.

Carve and serve with seasonal roasties
